White Truffle – The Haute Cuisine Diamond From Italy
The most awaited season of the year for luxury-food lovers has finally arrived; White Truffle Season. At the start of October, these prestigious white winter truffles have peeped out once again over the hills of Alba, Italy, and at the same time in the Signature White Truffle Menu offered at The Marini’s Group; the sophisticated Marini’s on 57 and Kuala Lumpur’s most prestigious steakhouse, Marble 8. Appetites are spiking and the demand has surpassed the current harvest, as more and more people around the world hope to get their hands on these supremely rare delicacies, before the season comes to a close, usually towards the end of January.
Modesto Marini, Founder of The Marini’s Group, through his commitment to scout for the best available ingredients, gives his guests the opportunity to savour these delectable precious gems known as white truffles, enhanced by contemporary Italian cuisine that emanates authentic and passionate flavours derived from time honoured traditional practices.
These tubers are a blessing to chefs because of their musky and alluring taste. Much like shallots with reminiscences of garlic and pepper, these white truffles perfectly enhance simple dishes and stand out as one of the national treasures of the culinary industry because of their make and their exclusivity. Another reason for being so extraordinary and sought-after is that they cannot be cultivated, unlike their black counterpart, but can only harvested in the wild. The hunting process involves a thorough search throughout the hills of Alba, either with swine or dogs that are specifically trained to locate these treasures. To celebrate the arrival of the white truffle season, the award-winning chefs at Marini’s on 57 and Marble 8 have curated a special recipe that is going to delight the elite gourmand in you.

Pappardelle Al Tartufo – Savour The Truffle Dream
Since white truffle is one of the most exquisite ingredients you can find on the market, it is good sense to not diminish its remarkable taste with foods that are too rich in flavour. Pasta is the ideal pairing because of its neutral and light flavour.
Ingredients for 4 people:
- Pappardelle, 300 g
- 1 white truffle
Before starting your culinary adventure as a chef, take some time to wash the truffle under running water, using a medium-bristled toothbrush to remove any soil.
Boil the water in a pot and, meanwhile, shave the truffle in ultra-thin cuts. Break the butter into small pieces and place it into a second pot, adding 1/3 of the shaved truffle to it. Cook the pasta and, when it is ready, place it into the second pot with the butter and the truffle. Then, add another 1/3 of the shaved truffle, a pinch of nutmeg and stir until the butter melts.
Prepare your dish, garnishing it with the remaining 1/3 of shaved truffle, seasoning it with Parmesan, and indulge in a squall of unimaginable refinement.
